Our weekly meal plan and everything I prepped to save time and make dinnertime with 3 little kids a bit easier!

The Plan

Breakfast:
Baked Eggs (recipe below)

Lunch:
Leftovers, bagged salads with rotisserie chicken, pesto pasta for the kids (Costco pre-made pesto with ditalini pasta)

Dinners:
Cajun chicken pasta with garlic bread (recipe below)
Lemon pepper chicken, rice pilaf (Near East brand), and air fryer broccoli (recipe below)
Teriyaki salmon bowls

Snacks & Treats:
Homemade dill dip
Homemade chex mix
The best chocolate chip cookies (recipe below)

Recipes:

Baked Eggs

Ingredients

6 eggs, beaten
1/2 cup heavy cream
1/2 teaspoon mustard powder
1/4 cup green onion
1 cup shredded cheddar cheese
salt & pepper
optional: chopped bell peppers, ham, bacon, etc.

Directions

  • Preheat oven to 350º, grease a 7×9 baking pan
  • Combine eggs, cream, and mustard powder in a mixing bowl. Beat well until fully combined.
  • Pour mixture into greased baking dish.
  • Sprinkle green onion, cheese, and any other add-in’s over top of the eggs.
  • Bake for 25-30 minutes or until puffed. If needed, cover with foil and bake for an extra 5 minutes to make sure eggs are fully set.
  • Makes 4-6 servings; double recipe for more!

 

Garlic Bread

Slice a loaf of French bread into 1″ slices. Soften 1/2 cup of butter and add 1 tablespoon of garlic powder (or more/less to taste, or use fresh garlic). Generously spread garlic butter on each side of the slices of bread, keeping them close together in the shape of the loaf. Wrap in foil and bake at 350º for 40 min or until baked to your liking.

 

Air Fryer Broccoli

Wash and cut broccoli into bite-sized pieces. Generously season with olive oil, salt, and pepper. Air fry at 400º for 10 minutes. Optional: top with grated parmesan cheese and a squeeze of lemon.

 

Chocolate Chip Cookies

Ingredients

1 cup butter, softened
1 cup white sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
3 cups AP flour
1 1/2 cups chocolate chips

Directions

Preheat oven to 350º. Cream together butter and sugars. Add eggs and vanilla, mix well. Dissolve baking soda in water and add to dough. Add salt. Mix. Add flour and mix until combined. Add chocolate chips and stir well. Scoop onto ungreased baking sheet and bake for 10-11 minutes.
